INGREDIENTS: 2 big firm tomatoes 1 big cucumber 1 medium onion 250gr couscous One or two batches of parsley (depends how much you like parsley) 4-5 leaves of fresh mint Half squeezed lemon Pinch of salt Pinch of black pepper 1 table spoon virgin olive oil Capers (optional) | INSTRUCTIONS: Place the couscous in a bowl with hot water and leave for about 20 min. Make sure it is soft enough to your liking. Drain the couscous in the strainer until all water is gone. Chop the tomatoes, the cucumber and the onion in squares. Make sure you remove the seeds. The seeds will make it watery, later. Chop the parsley and the mint. Now mix all the ingredients in a big bowl. Add the olive oil, salt, black pepper and lemon. Leave in the fridge for about half hour to help reveal its aromas. An hour later, it is ready to taste it. |
