The freshest freestyle tabbouleh salad

If you are getting hungry, and looking for something fresh and healthy to eat, there is nothing more refreshing than a green, fresh salad. Served with a tall glass of iced tea. It is coming from the Eastern side of the world and if you have been around, you have probably heard of the famous Tabbouleh salad. The salad with the freshest ingredients you can imagine. We get it, this salad is different than the typical green salad, and not everyone loves parsley, which is its base ingredient. But ‘different’ is definitely good and if you love parsley, prepare to fall in love all over again. Keep reading for the step-by-step recipe to the dream-fresh salad, adjusted to our liking.

2 big firm tomatoes
1 big cucumber
1 medium onion
250gr couscous
One or two batches of parsley
(depends how much you like parsley)
4-5 leaves of fresh mint
Half squeezed lemon
Pinch of salt
Pinch of black pepper
1 table spoon virgin olive oil
Capers (optional)

Place the couscous in a bowl with hot water and leave for about 20 min. Make sure it is soft enough to your liking.
Drain the couscous in the strainer until all water is gone.
Chop the tomatoes, the cucumber and the onion in squares.
Make sure you remove the seeds. The seeds will make it watery, later.
Chop the parsley and the mint.
Now mix all the ingredients in a big bowl.
Add the olive oil, salt, black pepper and lemon.
Leave in the fridge for about half hour to help reveal its aromas.
An hour later, it is ready to taste it.
